Easy Toffee Cookies and I can't eat just one!!!

Well, I made my favorite easy recipe, but I'm warning you these cookies are addictive.  This version uses chocolate and peanut butter chips and saltine crackers.

Melt 1 stick of butter with 1/2 cup of lightly packed brown sugar and cook for 2 minutes after it starts to boil.  On a greased cookie sheet place a sleeve of saltine crackers side by side.  Today instead of greasing the cookie sheet, I lined the cookie sheet with foil---but you must cover the sides or all the yummy deliciousness will run under the foil.   This worked better than greasing the pan and they were much easier to get out.   Pour the hot butter/sugar mixture over the crackers.  Place pan in the oven at 350 for 5 minutes.  As soon as cookie sheet comes out of oven sprinkle 1 cup of peanut butter chips and 3/4 cup of chocolate chips on crackers.  Wait a few minutes (Do NOT put pan back in oven).  Use a knife to spread the melted chips over the crackers.  Let pan cool a little and then place in refrigerator or freezer to harden melted chips.  After it hardens, break into pieces to eat.  Hope you enjoy them as much as my family does!!
