mY PiNteRest PrOjEcTs #5

I can hardly believe it's February 16 and I actually wrote this on Jan. 12, but never published it.  I love Pinterest and how it keeps my projects and ideas organized.  Perhaps my favorite part of it is trying many new recipes.  If you try any of the following recipes,  let me know what you think.  Just click on recipe title or link under each picture.  I'd love to hear from you.

Neiman Marcus Dip

Neiman Marcus Dip was so delicious and so simple to make.  I did use regular bacon not the bacon crumbles, mainly because of the extra preservatives in the packaged variety.

Hubby and I both loved this.  It would be great to take to a party.
***** Highly recommend.  Will be making this again.

Marlboro Man's favorite sandwich

This is from the Ree Drummond's blog-The Pioneer Woman.  She has some great recipes and I also love to watch her cooking show on Food network.  This has become our favorite go to steak sandwich.  I do add sweet red peppers with the onions to her recipe which I think makes it even better.  We cannot get enough of this.  Did you know the secret of cooking steak is frying it in butter?  YuMmY!!! and oh so delicious!!  I actually had a good friend tell me he loved me after eating this meal.  It was greatness!!!
*****This is a tried and true recipe.  LOVE IT!

Corn, Cucumber, Tomato Salad

I first had a salad like this at a TCU football game from The Big Purple Truck.  It was love at first bite and a taste explosion in my mouth.  I couldn't believe I had never tried anything like it before.  So shortly after the game I began an internet search and found this recipe.  I add red peppers, cilantro, pepper, and use rice vinegar and a little lemon juice in mine.
*****DeLIGHTfully delicious, a favorite

Thanks to Debbie and Dakota at Just a Spoonful of...... for the Neiman Marcus dip recipe, Ree Drummond for Marlboro Man's Sandwich, and Molly Watson from about.com for the Corn, Cucumber, and Tomato Salad. You have made many meals for my family and friends better.  I think a perfect meal would be to have all 3 of these recipes.

mY PiNteRest projects #4

Retirement is good great.  I'm finding time to sew, cook, read, relax, do yoga, clean more (but only if I want to), relax, and just simply enjoy my free time.  I've been really enjoying the no deadlines and less hectic lifestyle.  I still don't particularly enjoy the cleaning up after cooking, but it's getting done.  My husband actually told me I was cooking too much!!  Maybe I'm spoiling him, but after 33 years of marriage, he probably deserves it.  I love you hubby!

Recap from week 1:
I've decided that one of my retirement projects will be to post about projects and recipes I have tried on Pinterest. What I post will strictly be my opinion. I hope that giving my opinion does not offend anyone.  Just click on recipe title to get the actual recipe..  Thanks for reading!!

Weekend Brunch Casserole
This was an evening meal for us and it was delicious.  It took a little longer to prepare because I had to scramble the sausage and I also don't mind it having some crispy bits.  I used spicy sausage (YUM!) and added red peppers and onions.  I used 7 eggs because I thought it needed more eggs and I also used sharp cheddar instead of mozzarella.  This was a great dinner so I know it would be wonderful at breakfast.  We had some to eat the next morning and I froze some to eat at a later date.
*****Very good, will definitely make again.

This chicken was very easy to prepare.  I like delicious food and if it can be cooked in a crockpot, I say YEAH!!  Fix it and forget it.  We did eat it without the rice but I'm sure it would be even more delicious with it.

*****Yes, very good!!!! Will make again.

Caramel apple crisp

OH MY GOODNESS!!!  This was utterly delicious.  Yummy for my tummy, but not so much for my waistline!   Is it low cal if I didn't serve it with ice cream?!??!
I believe moderation is probably the key when it comes to eating this dessert, but that is a lesson I still need to learn.

*****DELICIOUS!!  Will make this over and over.

Thanks to Lauren, Brenda, and Dana for the pin recommendations this week and Culinary.net, Lake Lure Cottage Kitchen, and Hil's blog for the great recipes.

mY PiNteRest projects #3

Last Monday was Labor Day so I didn't do any reviews.  My reviews this week are all recipes and I thought they were delish!!!  Try 'em and let me know what you think.  Just click on recipe title or link under each picture.  I'd love to hear from you.

Crusted Honey Mustard Chicken
This was a weight watchers recipe worth 7 points.  I wondered whether I should make it because I was just a tad bit worried about whether I would like it or not.  It was easy to make and oh so delicious.  I did cook longer than recipe said, but it is probably just my unpredictable oven that really needs to be replaced.  I think kids would love this!!
*****YuMmY for my tummy!!  Recommended!!

Overnight Caramel French Toast
This was very easy to prepare and wonderful to be able to get up on Sunday morning and just put it in the oven.  Hubby and I loved it.
*****Highly recommend.  I will definitely make this again.  It would be great to serve for guests or just a special breakfast for your family.

I found this recipe last fall (2011) and it was the very best potato soup I had ever made. If you add the bacon bits, grated cheese, and sliced green onions to your bowl right before serving, it makes for a taste explosion. I have shared this recipe with many and all that have made it have loved it. Let's just end with I'm ready for some chilly weather so I can enjoy this soup once more.

*****Highly recommend. Will make this over and over. So very YUMMY!!!

Thanks to LouAnn, Cortni, and Amy for the pin recommendations this week and to Pearls, Handcuffs and Happy Hour, Weightwatchers, and Recipe4living for the great recipes.

mY Pinterest Projects #2 and it's all good this week

T-shirt storage
I find so many things on Pinterest that I just want to hit myself in the head and say, "DUH!!! I should have thought of that!"  This storage solution for t-shirts is one of those ideas.  Instead of making stacks of clothing, you fold them and store them vertically which enables you to SEE ALL clothing instead of just the top of the stack.  I have a bunch of t-shirts and tank tops.  I did this quite a few months ago and it has been so much easier to find the t-shirt or tank you need.  I love it!  I would highly recommend it.  When I stored them in horizontal stacks, I would always mess them up looking for the one I needed.  This is a super easy project to try.
*****LOVE it and it doesn't cost you anything.

                                     Body Scrub

Body scrub
This is an amazing body scrub that I made with sugar, coconut oil, and lemon juice.  I'm sorry I don't have a picture of mine, but I've used all of my 1st batch and need to make more.  My recipe did not turn out yellow though it was white.  I just did a normal shave with my shaving cream or soap, and then rubbed this all over my legs and then rinsed it off.  My legs were sooooo soft and glistened.  They stayed soft too!  I also put some on my arms and feet.  I love this stuff.  If you've ever purchased body scrubs before they aren't cheap, but this isn't that expensive unless you buy one of the higher priced coconut oils.  I simply stored it in a rubbermaid container by the tub.  It was so much easier than applying lotion to my legs after bathing.  Applying lotion was also something I often failed to do because of the time required and not wanting to mess up my clothes.  I was a little worried that it might leave a residue and make the tub too slippery, but I would either spray the tub down with Dow Scrubbing Bubbles afterwards and then rinse with warm water or just rinse it with hot water and it was fine.  I think one reason it was so easy to clean was I used coconut oil which is water soluble.  I don't guarantee the results with olive oil or any other oil, but I'm thinking they would leave residue and be harder to clean.  I think we ordered the coconut oil from amazon.com but I know it's available at Sprouts and other health food stores.  Coconut oil has many uses.
*****Super scrub!!!

This is an amazing drink and oh so much cheaper than the coffee drinks you buy at coffee houses. I feel like I am really indulging myself when I drink it. My friends that I have made it for loved it also. I could not find ground coffee in a 16 ounce container though so using my math skills I used 12 oz. of coffee in 3 quarts of water.  The recipe also stated to let the coffee sit in the water for 12 hours or overnight but I thought this was too long though and the coffee tasted a little bitter so I only let it sit for about 7 hours.  The sweet cream is rich, but you know sometimes you just need to say, "I'm worth it!"  Try this if you like iced coffee drinks; I think you will like love it!  If you want a mocha taste, add a little hershey's syrup or if you want vanilla taste, use vanilla extract or syrup.

*****I will be making this always and forever!!!

mY Pinterest Projects--the Good, the Bad, and the Ugly

I've decided that one of my retirement projects will be to post about projects and recipes I have tried on Pinterest.  What I post will strictly be my opinion.  I hope that giving my opinion does not offend anyone.  I just think that sometimes people see something on Pinterest and it may say,  "This is the best...... ,  my family's favorite meal,  so easy to do, etc. so you pin it and someone pins from you, and so on and so forth.  You might do a project that you think someone you know has done and in reality they haven't.  They are simply repinning.  I'm going to be honest and even tell you if I plan on making/doing it again.  When adding pins to your boards, check out the link to see if it works.  I hate going to what I think is a recipe or project to find out it is no where to be found or worse yet it links to spam.  You can link to recipe/project by clicking on title below each picture.  So here goes.........  I hope it doesn't get too bad or I step on someone's toes.

Recipes...
Cauliflower Popcorn--Roasted Cauliflower
This was delicious.  I don't normally eat or even like cauliflower, but in an effort to eat healthier I thought I would try this.  I've already made it twice.  I liked it so much the first time that I decided to double it the second time.  This didn't work so well as the cauliflower didn't brown as well.  I added some pepper, and then Parmesan cheese right before serving.
***** Will definitely make again

Roasted cabbage

I have never been a fan of cooked cabbage, except for eating sauerkraut occasionally.  My niece, Shelly, loves cooked cabbage, but I never acquired the taste for it.  Again in my quest to be healthier, I tried this.  It was okay.  I loved the bacon and yes I know that part is not so healthy, but I love me some bacon!!!  It took longer to cook than specified.  It would probably cook better  if cut in smaller wedges.

*** I will possibly make this again, but warning:  Opening up a container of cooked cabbage a day later is not so pleasant.  In fact, the smell is kind of gross.

Man pleasing chicken

Ok, this was a flop in my book.  I was anticipating something that was delicious, melt in your mouth, stick to your ribs, etc. based on the  notes of this pin.  Chicken is my favorite meat, but it can be boring to have the same thing all the time so I was branching out and using a strange combination of ingredients like Dijon mustard and maple syrup.  I was hoping for a taste explosion, but it didn't happen.  Now I will tell you I didn't have REAL maple syrup and I wasn't going to pay anywhere from $5.00 to $10.00 for a bottle so I went with my pancake syrup.  Maybe this was the problem or the fact that I used chicken breast strips not thighs.  If you make this and it is good, let me know.  Better yet, if you live near me, call me up and I'll come sample it.  I want to know if it was just me.  Hubby didn't really like it either.  My pups enjoyed it though!!
**Will not make again, unless you convince me otherwise.

Almond Joy Pie
OH MY GOODNESS!!  A taste explosion!  If you like coconut and chocolate, you MUST make this!  It was incredibly delicious and the ease of preparation was unbelievable.  This is rich, rich, rich.  That's probably the reason I love it!  Note:  I only used 1/4 cup of sugar because the coconut is already sweet.  Remember serving at room temperature makes cutting a beautiful slice of awesomeness easier.

*****(I'd put more, but I've decided to stay with a 5 star standard)  I will definitely be making this again.  I wish I had some right now.

What I want to try in the weeks ahead......

Quilt as you go
