mY PiNteRest projects #4

Retirement is good great.  I'm finding time to sew, cook, read, relax, do yoga, clean more (but only if I want to), relax, and just simply enjoy my free time.  I've been really enjoying the no deadlines and less hectic lifestyle.  I still don't particularly enjoy the cleaning up after cooking, but it's getting done.  My husband actually told me I was cooking too much!!  Maybe I'm spoiling him, but after 33 years of marriage, he probably deserves it.  I love you hubby!

Weekend Brunch Casserole
This was an evening meal for us and it was delicious.  It took a little longer to prepare because I had to scramble the sausage and I also don't mind it having some crispy bits.  I used spicy sausage (YUM!) and added red peppers and onions.  I used 7 eggs because I thought it needed more eggs and I also used sharp cheddar instead of mozzarella.  This was a great dinner so I know it would be wonderful at breakfast.  We had some to eat the next morning and I froze some to eat at a later date.

This chicken was very easy to prepare.  I like delicious food and if it can be cooked in a crockpot, I say YEAH!!  Fix it and forget it.  We did eat it without the rice but I'm sure it would be even more delicious with it.

Caramel apple crisp



OH MY GOODNESS!!!  This was utterly delicious.  Yummy for my tummy, but not so much for my waistline!   Is it low cal if I didn't serve it with ice cream?!??!
I believe moderation is probably the key when it comes to eating this dessert, but that is a lesson I still need to learn.
